I haven’t done much baking recently. I’ve realised that too many treats (even if they are healthy, home-made and paleo) simply don’t agree with me (sigh). It’s a shame because baking is my good vibes therapy.

So recently I haven’t tried anything new and did not post any recipes on my blog. These days, when I decide to do some baking, I go for my tried and true recipes that I know won’t take any time and effort (and won’t make me sick). They’re all delicious though!

Blueberries, raspberries, strawberries, blackberries, cherries. They’re all around us these days. This is the perfect time to make this simple cherry pie (with a handful of blueberries, too).

Gluten-free baking can make one’s life pretty difficult. Once your binding agent is taken away, everything gets more complicated. Fortunately, we still have eggs and arrowroot (used instead of potato or corn starch) and, fortunately, there is this super easy pie crust made of coconut flour. Because we’re using a pie dish, we don’t need to fret too much about the right dough consistency (which means the chance is high that the overall result will turn out just fine). As you can see from the photo, I still had some crust dough left and I used it as a crumble-style topping.

The pie filling couldn’t get any easier! I used the same instructions as for my rhubarb-raspberry crumble. Trust me, you’ll spend most time pitting and slicing the cherries. The rest takes no time at all!

If you’re still hesitant about paleo baking, this pie is the right choice. Believe me, nothing can go wrong.

Cherry pie

(AIP + eggs)

1 1/2 cup pitted cherries cut in half

1 cup blueberries

2 tbsp coconut sugar

2 tbsp arrowroot



1 1/2 cup coconut flour

1 1/2 cup coconut oil

1 tbsp arrowroot

3 eggs

2 tbsp honey

1. Preheat oven to 175°C (350°F).


2. Melt coconut oil over low heat.

3. Prepare fruit filling: Mix cherries and blueberries with arrowroot and coconut sugar. Mix well and let sit while preparing pie crust.

4. Mix melted coconut oil together with the crust ingredients until dough starts forming a ball. If you find the dough is still too crumbly, feel free to add a tablespoon of water or coconut milk.

5. Smear pie dish with a bit of coconut oil and dough evenly into it.

6. Spread pie filling evenly on top of dough. Add dough crumble if you still have some dough left.

7. Bake for approx. 15 min.

8. Enjoy warm or cold. Store in the fridge.

More tips:

Feel free to use ghee or grass-fed butter instead of coconut oil.

When pressing dough into the pie dish, dip your hands under running water. The dough won’t stick.

Use any kind of fruit you like for the filling. Be creative!
